For $99, you can buy a Silabs C8051F350 development kit which includes a
microcontroller with built-in 24 bit, 8 channel A/D converter with serial
port and the development tools.

If that is still too rich for you :-) you can try the Texas Instrument
MSC1210 DAQ-Evaluation_module

which is a small PWB that plugs directly into the serial port and has
another 8051 variant microprocessor with also a 24 bit/8 channel A/D
converter.

I have used (and still use) the MSC1210, but while I have used a number of
the Silicon Lab parts, I have not used the C8051F350. In my opinion, the
development tools and support from Silabs are vastly superior to the tools
provided by Texas Instrument (essentially none).

Of course, in either case, you will have to write some software, but the
Silabs kit comes with sample programs that actually work and get a lot of
the low level stuff out of the way.
